The Fiesta de la Aceituna is a festive celebration typical of the municipality of Martos (Jaén) Spain. This festival symbolizes the official start of the olive harvesting season and aims to pay tribute to the olive growers who work in the campaign. It has more than thirty years of tradition.
The festivity culminates on December 8 with the realization of official acts such as the emulation of the extraction of the first olive oil of the year by means of a hand-operated screw press and the free distribution of the so-called hoyo aceitunero, which consists of a bag containing a bread roll, olive oil, olives, cod and water.
