Pizza cake is a Canadian multiple-layer pizza baked in a pot or cake pan. First invented by Boston Pizza, recipes were posted online as early as April 2014, though they did not become viral until the Pillsbury Company posted an example in September 2014. International Pizza Cake Day, observed every year on the Third Thursday of April.
Along with the glutamate, during the pizza cooking process, the maillard reaction brings forward the flavor compounds that give pizza its distinct flavor. During the cooking process, the sugars and amino acids in the dough and pizza toppings converge to create the flavor compounds.
The psychological response to pizza’s ingredient combinations is partially explained by the fact that highly processed foods like pizza, with added amounts of fat, refined carbohydrates and salt, are most associated with behavioral indicators of addiction, such as loss of control over consumption, cravings and continued consumption despite negative consequences, according to Erica M. Schulte, a doctoral candidate in clinical psychology at the University of Michigan who authored the recent study.
