Just because the word "devil" is in the name, it does not mean that the cake is evil. It does not refer to the evil one in the Bible. Devil and deviled are culinary terms that describe foods that are dark, rich, and stimulating. Devil's food cake is an old fashioned chocolate cake made of chocolate or cocoa and baking powder. It is moist, soft, rich, and very good for keeping.
Devil's food cake first appeared in the United States in the early 1900s. There is a recipe printed for the desert as early as 1905. It may be that this cake was named for its contrast to the snow-white “Angel Cakes” that were being made prior to the “Devil's Food” cake.
