If you are Colombian, or have enjoyed the most welcoming country in the world at some point in your life, you know that arequipe is spread over a thousand and one different recipes. Wait, stop for a moment. Break the aluminum packaging and caress it with your spoon. Now, imagine what happened when this joy was spread several centuries ago.
Great ideas are disputed by everyone. The history of "dulce de leche", or "arequipe", as we call it here in Colombia, is not without controversy: some say it comes from Indonesia, others from Argentina. In Brazil they defend that it was their invention, while in France they claim that it belongs to them.
The debate is heated and each country that tastes it has its own story about the origin of the sweet. In Argentina, they believe that the recipe comes from a fortunate mistake: on February 29, 1829, Commander Juan Lavalle signed the "Cañuelas Pact" with Juan Manuel Rosas, head of the federalist army. But what does this event have to do with dulce de leche? The short version is the following: Lavalle arrived at Rosas' house. Exhausted by the trip, he asked for a bed to sleep for a while.
This was seen by one of the employees of the house, who, believing that Rosas was sleeping in his bed, brought a mate for the military man to rest. Her surprise was so great that, while juggling not to throw the cup on the floor, she forgot the milk with sugar that she had left heating on the kitchen stove.
The rest is history, a sweet story.
The French version of the story is more or less similar to the Argentine one: an absent-minded cook brought to life the most beloved dessert in half the world. However, everything indicates that dulce de leche comes from Indonesia. The first records date back to the 16th century, and it is not implausible to think that the most beloved dessert of Colombians and its recipe was exported by the Spaniards who occupied the Philippines during the 14th century. The recipe traveled from Indonesia to the Philippines some time ago.
