The National Ceviche Day is a national holiday celebrated in Peru every June 28, in recognition of one of the most representative dishes of Peruvian gastronomy. The declaration was made by Ministerial Resolution 708/2008 of the Ministry of Production, published on September 18, 2008 in the Official Gazette El Peruano.
In Peru, cebiche is officially recognized as "Cultural Heritage of the Nation", as established by National Directorial Resolution No. 241/INC of the National Institute of Culture, issued on March 23, 2004 and published in the Official Gazette El Peruano, as it is historically considered as one of the main dishes of the national gastronomy.
The date for the celebration was chosen to promote the sustainable consumption of this flagship dish made with fish from the Pacific coast, since its production is reduced in the southern winter months.
