National Maple Syrup Day was created in the United States to celebrate the amber substance that everyone has long recognized and loved.
Most of the world's maple syrup comes from Quebec. The Iroquois people invented maple syrup. The story has it that Chief Woksis of the Iroquois found the sweet (syrup) when he threw his tomahawk at a maple tree in the cold of winter. The next day, the sun warmed the sap inside the tree, and from the hole sprung forth the tasty syrup. Indigenous peoples living in northeastern North America were the first groups known to have produced maple syrup and maple sugar. According to Indigenous oral traditions, as well as archaeological evidence, maple tree sap was being processed into syrup long before Europeans arrived in the region.
A maple tree must be around 45 years old before it is tapped for syrup making. It takes an average of 40 gallons of sap to produce one gallon of syrup. Although maple trees are found in other continents, no other continent's maples can compare in sweetness to the sugar maple trees in North America.
