A popular variant in the US is English toffee, which is a very buttery toffee often made with almonds.
Most food historians agree that it first became popular in the early 1800’s, particularly in the UK/Northern Europe, where butter was plentiful. The Oxford English Dictionary first mentions “toffee” in 1825, implying that the word had already been in use for some time. Food writer Harold McGee claims it to be “from the Creole for a mixture of sugar and molasses”, but which creole language isn’t specified.
Almond Buttercrunch Recipe. Ingredients: ¾ cup (1 ½ sticks) unsalted butter; 1 ¾ cups sugar; 2 tablespoons light corn syrup; 2 tablespoons cider vinegar; 2 cups lightly toasted almonds, pecans, or pistachio nuts, chopped or left whole; 4 to 6 ounces high-quality semi-sweet, bittersweet, or milk chocolate (optional), to taste, chopped; ½ cup finely chopped lightly toasted party nuts of your choice or coconut (optional). Order an almond buttercrunch biscotti to dip into a black coffee to celebrate the day instead.
