2 December - National Fritters Day and Feast of St. Bibiana in USA
"Fritter" derives from the Latin word frictura which translates as fried or to fry. Any ingredient dipped in batter and fried can essentially be a fritter, though it may not always be called so.
It requires some base ingredient beyond the dough it is cooked with. The first historical record of the fritter dates back to 1665. Samuel Pepys, an Englishman who served as a Member of Parliament during the English Restoration period, noted in his diary that he would be enjoying some fritters before Lent.
St. Bibiana, Virgin and Martyr (Feast day - December 2nd). She was the daughter of Christians, Flavian, a Roman knight, and Dafrosa, his wife. Other than the name, nothing is known for certain about this saint. In the year 363, Julian the Apostate made Apronianus Governor of Rome. St. Bibiana suffered in the persecution started by him.
In Spain Bibiana was the patron saint of those suffering from hangovers because her name resembles the Spanish word for drinking.
